Our playgroup kids had loads of fun building different structures in a tray of shaving cream. Not only was it a great fine-motor skill activity, it was a wonderful construction activity, incorporating messy and imaginative play.
If you want to do something similar with younger kids, you could use whipped cream and foam blocks, finishing off with water-play to teach kids how to clean up blocks in a big tub of water.
